- 600g. mixed salad
- 400g. shrimps
- 50g. olive oil
- 50g. orange juice
- 10g. lime juice
- 10g. basil pesto
- a pinch of estragon
- salt, pepper
- 300g. vinaigrette
+ Ingredients for the vinaigrette
- 350g. olive oil
- 100g. orange juice
- 20g. lime juice
- 5g. Dijon mustard
- salt
+ Execution of the vinaigrette
- Put all the ingredients in a blender except the olive oil.
- Then add gradually the olive oil.
+ Execution of the salad
- Preheat the oven to 180 degrees.
- Put in a baking pan the shrimps, the olive oil, the pesto, the estragon, the orange
juice and marinate for 10 min. - Add salt and pepper and bake in the preheated oven for 5-8 min as long as they
stay juicy. - In a bowl mix the vegetables with 300g. vinaigrette. Add salt and serve with the
shrimps.
