Mixed salad with grilled vegetables and Balsamic vinaigrette

+ Ingredients for the salad

  • 600g. mixed salad
  • 2 medium zucchini thinly sliced
  • ½ red pepper cut into cubes
  • ½ orange pepper cut into cubes
  • 1 halved chicory
  • 30g. olive oil
  • 120g. goat cheese
  • 120g. vinaigrette

 

+ Ingredients for the vinaigrette

  • 80g. balsamic
  • 10g. honey
  • 5g. Dijon mustard
  • 35g. water
  • 300g. olive oil
  • salt

 

+ Execution of the vinaigrette

  • Put all the ingredients in a blender except the olive oil.
  • Then add gradually the olive oil.

 

+ Execution of the salad

  • Put in a baking pan the zucchini, the peppers and the chicory.
  • Add the olive oil, salt and stir.
  • Bake in grill mode.
  • Cut the chicory into strips.
  • Mix the grilled vegetables with the mixed salad and 120g. vinaigrette.
